Title: Creamy Vegetable Soup C/p

Yield: 8 Servings

1lgOnion; chopped
1/4cButter
3mdSweet potatoes; peeled, chopped
3mdZucchini; chopped
1bnBroccoli; chopped
2qtChicken stock or
2qtVegetable broth
2mdRed potatoes; shredded
3 Cloves garlic; minced
1cnCreamed corn or
3/4cFresh corn kernels
1tsCelery seed
1tsGround cumin
2tsSalt
1tsPepper
2cLight cream

Place all ingredients in a 4 to 5 quart crockpot except cream. Cook on the low setting 6 to 8 hours or until sweet potatoes are tender. Ten minutes before serving, add the cream, if using. Heat through and serve. Formatted by Lynn Thomas. Recipe from Tracy Handler. I made this on 10-8-96 and it was good with or without the cream. Instead of the spices, I substituted 1 tsp. beaumond.
